La Soupe du Cinq Mai

  1. Preheat oven to 350 degrees F. Place cut tortilla rounds in oven and bake until crisp.
  2. Heat olive oil in large heavy soup pot over medium heat.
  3. Add onions and cook until wilted and dark brown, stirring occasionally.
  4. Add garlic and stir until fragrant, about 20 seconds.
  5. Add oregano and sprinkle with salt and pepper.
  6. Saute 3 minutes.
  7. Add both broths, lime juice and bring to a simmer.
  8. Simmer a few minutes, then add beer.
  9. Reduce heat to medium-low and simmer gently for 10 to 15 minutes.
  10. Meanwhile, drink the rest of the beer, you've earned it!
  11. Taste and adjust seasoning.
  12. Preheat the broiler and move rack to second level below the broiler element.
  13. Ladle soup into bowls.
  14. Add to each bowl some avocado, tomatoes, green onions, cilantro and jalapenos.
  15. Top bowls with baked tortilla rounds then cheese.
  16. Broil until cheese is melty and lusciously brown.
  17. Garnish with lime slices, a little leftover cilantro and serve with beer, if desired.
