Chocolate Sauerkraut Pie
- 2 nine inch pie crusts (homemade or frozen)
- 1/2 cup Sauerkraut
- 1 stick (1/2 cup) butter, softened
- 2 cup sugar
- 5 large eggs, well beaten
- 1 cup milk
- 1 tsp vanilla extract
- 2 tbsp fresh lemon juice
- 2 tbsp grits
- 2 tbsp all-purpose flour
- 1 cup semi-sweet chocolate chips
- Preheat Oven to 350F.
- Drain and rinse the Sauerkraut thoroughly, squeezing dry.
- Cream the softened butter and sugar together with an electric beater in a large mixing bowl for close to a minute and longer.
- Add the beaten eggs, milk, lemon juice, and vanilla extract and mix well.
- Combine separately, the grits and flour, mixing them well.
- Add this to the egg mixture and blend well.
- Fold the sauerkraut and chocolate chips into the final mixture and pour into your two pie crusts.
- Bake at 350F for 55 to 60 minutes, or until a knife inserted in center comes out clean.
