Cajun-Citrus Tilapia
- 8 tilapia filets
- 1 tbsp cajun seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1/2 tsp thyme; minced
- 1/2 tsp ground white pepper
- 1 grapefruit; zested
- 1 orange; zested
- 2 lemons; zested
- 1 sea salt
- 1 EVOO; as needed
- Drizzle just enough oil over fish to cover.
- Season.
- Keep zest for garnish.
- Slice the fruits into medium-thin slices.
- Lay half across the bottom of a baking sheet.
- Place filets on top.
- Cover with slices of fruits.
- Keep a few slices for plating.
- Bake at 400 for approximately 8 minutes or until thermometer reaches 145
- Garnish with slice of fruit and/or parsley
- Try marinating in orange juice or white wine!
