Lentils and Sausage
- 1 lb lentils, rinsed and cleaned
- 1 lb any link sausage, cut into pieces
- 2 celery ribs, diced
- 2 carrots, diced
- 1 onion, chopped
- 3 tablespoons tomato paste
- 1 bay leaf
- salt
- pepper
- dried thyme
- 8 cups water
- 8 teaspoons chicken bouillon powder
- Preheat oven to 375.
- Brown Sausage in dutch oven.
- Add vegetables and cook until onion is translucent and a little browned, about 10 minutes.
- Add water, scraping bottom of pan to deglaze.
- Add bouillion and other seasonings to taste.
- Bake in oven for about 45 minutes to 1 hour or until lentils are soft.
