Marinated Turkey Breast

  1. For marinade, stir together lemon peel, lemon juice, oil granuals, thyme, garlic, salt, pepper, & 1/4C water.
  2. Place turkey in a plastic bag set in a bowl.
  3. Poour marinade over turkey close bag and refrigerate for 2 hours.
  4. Remove turkey from bag, reserving marinade.
  5. Spray an 8" skillet with cooking spray.
  6. Add turkey slices.
  7. Cook over medium heat about 4 minutes or till tender & no longer pink, turning once.
  8. Remove turkey from skillet; keep warm.
  9. Add zucchini, mushrooms, & 2TBS water to the skillet.
  10. Cover and cook for 3-4 minutes or till zucchini is crisp-tender.
  11. Meanwhile stir together the reserve marinade, & cornstarch.
  12. Add to veggies in skillet.
  13. Cook and stir till thickened & bubbly.
  14. Cook and stir 1 minute more.
  15. Serve the veggies with turkey slices & if desired , rice.
