Hominy Casserole Recipe
- 2 cans hominy, liquid removed
- 2 cans whole kernel corn, liquid removed
- 1 can cream of mushroom soup
- 1 pound Mexican warm Velveeta cheese
- 1 onion, minced
- 1 bell pepper, minced
- Saute/fry onion and bell pepper in butter.
- Add in soup, hominy, and corn.
- Salt and pepper to taste.
- Add in cheese in slices, and mix well.
- Cook about 20 min.
