Red Beans and Rice
- 2 Tablespoons Oil
- 2 whole Onions, Chopped
- 1 whole Green Pepper, Chopped
- 3 cloves Garlic, Minced
- 1 Tablespoon Chili Powder
- 1/2 teaspoons Chipotle Chile Powder
- 2 teaspoons Oregano
- 2 cans Kidney Beans, Drained And Rinsed
- 1 can Tomato Sauce (8 Oz)
- 1 cup Water
- 1 dash Hot Sauce (i.e., Cholula)
- 1/2 cups Sour Cream
- 6 cups Cooked Rice
- Cook rice.
- Heat oil in large skillet.
- Add onions and saute till they begin to get translucent.
- Add green peppers.
- Saute till they begin to get soft.
- Add garlic, cook for 1 minute.
- Add chili powders and oregano and let cook 1 min.
- Add beans, tomato sauce and water.
- Bring to a simmer and cook for 10 minutes.
- Stir in hot sauce.
- Serve over rice and top with sour cream.
- **You can change up the onions and peppers, more peppers, less onion if you like.
- I like onions a lot.
