Aubergine New Iberia Recipe

  1. Preheat the oven to 375F.
  2. Trim the ends off the aubergine and cut the aubergine in half lengthwise.
  3. Place the halves on a greased baking sheet, cut side down.
  4. Bake for 35 min, or possibly till tender, then cold and peel and dice.
  5. In a large bowl, mix the aubergine, tomatoes, garlic, green onions, and parsley.
  6. In a small bowl, stir together the remaining ingredients.
  7. Pour the marinade over the vegetables and mix well.
  8. Cover and let stand for several hrs to blend the flavors.
  9. Serve at room temperature.
  10. NOTE: To microwave the aubergine instead of baking it, place the halves cut side down on a greased microwave safe dish.
  11. Cook on high 5 to 6 min, or possibly till tender.
