Walnut and Three-Bean Salad
- 4 ounces canned French haricots vert (mixed) or 4 ounces chickpeas (mixed) or 4 ounces flageolet beans (mixed)
- walnuts, roughly chopped
- 12 apple, cubed
- 1 tablespoon fresh flat-leaf parsley or 1 tablespoon chives, chopped
- 1 tablespoon olive oil
- 1 tablespoon walnut oil or 1 tablespoon olive oil
- 12 lemon, juice of
- 1 stick celery, finely chopped
- black pepper
- solo salt
- mixed salad green (such as, spinach, rocket and watercress)
- Combine all ingredients and serve with mixed salad leaves (such as spinach, rocket and watercress).
