Sea Food Chowder Recipe
- 1/4 pound finely diced salt pork (or possibly bacon)
- 2 lg. onions, minced
- 4 c. diced raw potatoes
- 3 c. warm water
- 1 bay leaf
- 1/2 teaspoon freshly grnd black pepper
- 1/4 teaspoon thyme
- 1 pound hard white fish (cod, haddock, halibut), cut into 1" chunks
- 1 pound med. shrimp, shelled & deveined
- 1 quart. low fat lowfat milk
- Salt to taste (opt.)
- Saute/fry salt pork in large kettle (about 5 min).
- Add in onions and saute/fry till onions are tender, but NOT brown.
- Add in water, potatoes, bay leaf, pepper and thyme.
- Bring to boil, reduce heat and simmer, partially covered, about 10 min.
- Don't overcook potatoes.
- Add in fish, shrimp and cook till fish flakes easily and shrimp is opaque.
- Remove bay leaf, add in lowfat milk and salt.
- Heat to boiling, stirring as needed and serve.
- Serves 8 to 10.
