Chilled Guacamole Soup
- 3 1/2 c. chicken stock
- 1 Florida avocado
- 1 c. nonfat sour cream
- 1 medium onion
- 2 tbsp. lemon juice
- 2 clove garlic
- 1/2 tsp. chili powder
- Salt and pepper to taste
- 1 tsp. Paprika for garnish
- Combine the stock, avocado, sour cream, onion, lemon juice, garlic, and chili powder in a blender jar.
- Process until pureed.
- Chill for 45 minutes.
- Taste and season with salt and pepper if needed.
- Top each serving with the paprika.
