Teriyaki Steak Sandwich

  1. In nonstick 12-inch skillet over medium-high heat, in hot salad oil, cook pepper and onion until tender and golden.
  2. Remove to bowl, leaving oil in skillet.
  3. Meanwhile, cut flank steak across the grain into thin slices; toss with cornstarch.
  4. In oil remaining in skillet over high heat, cook flank steak, stirring constantly, just until it loses its pink color, about 5 minutes.
  5. Add teriyaki sauce and 1/4 cup water; heat to boiling.
  6. Spoon steak mixture over bottom halves of English muffins; top with pepper mixture, then top halves of muffins.
