Norwegian Molasses Cookies
- 2-1/4 cups flour
- 2 tsp. baking soda
- 1 cup firmly packed light brown sugar
- 3/4 cup margarine or butter, softened
- 1/4 cup cholesterol-free egg product
- 1/4 cup light or dark molasses
- 1/4 cup sugar
- water
- sprinkles (optional)
- Mix flour and baking soda; set aside.
- Shape dough into 48 (1 1/4-inch) balls; roll in sugar.
- Place on greased and floured baking sheets about 2 inches apart.
- Lightly sprinkle dough with water.
- Bake at 350F for 15 to 18 minutes or until done.
- Remove from sheets; cool on wire racks.
- Decorate with Powdered Sugar Glaze and colored sprinkles if desired.
- Powdered Sugar Glaze: Combine 1 cup powdered sugar and 5 to 6 teaspoons skim milk.
