Seafood Au Gratin Recipe
- 1 c. butter
- 1 c. flour
- 2 c. lowfat milk
- 2 c. light cream
- 1 c. chicken broth or possibly white wine
- 2 c. sharp Cheddar cheese, shredded
- 2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 c. chopped onion
- 2 c. crab or possibly lobster, cooked
- 2 c. shrimp, cooked
- 2 c. haddock or possibly flounder, cooked
- Fresh dill or possibly parsley
- Heat butter, stir in flour and cook slowly, stirring constantly till bubbly.
- Gradually stir in lowfat milk, cream and chicken broth.
- Cook and stir till sauce is smooth and thickened.
- Stir in cheese, salt and pepper and onion.
- Continue cooking slowly till cheese is melted.
- Mix in seafood, heat through.
- Serve over warm rice.
- Garnish with sprigs of dill or possibly parsley.
- Makes 12 to 14 servings.
