Pigs Beer Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 12 teaspoon salt
- 12 cup chilled shortening (I prefer lard)
- 1 (12 ounce) bottleof flat beer
- Combine flour sugar and salt in a large bowl.
- Add the shortening or lard and cut into dry ingredients with a fork or your hands.
- Flat beer -- beer that has lost it's fizz -- works best!
- Otherwise just let the beer get to room temperature; add 1/2 to 3/4 cup to mix.
- Knead the dough just enough to blend -- over mixing will make it tough.
- Flour a flat surface and spread the dough to a one inch thickness.
- Cut your biscuits out.
- Bake at 425F for about 10 minutes or until brown.
