Atsuage Broccolini Soboro An
- 2 Atsuage (silken)
- 70 grams Broccolini
- 100 grams Minced chicken
- 400 ml Dashi stock
- 1 tbsp Sugar
- 1 tbsp Mirin
- 2 tbsp Usukuchi soy sauce
- 1 piece Ginger
- 1 pinch Katakuriko
- Cut the atsuage into whatever size you prefer.
- Cut the broccolini into 1 cm pieces.
- Mince the ginger.
- Put the atsuage, dashi stock, sugar, mirin, soy sauce, and ginger in a pot and heat on high.
- Once it's come to a boil, add the minced chicken while crumbling it.
- Then boil on low-medium heat for 10 minutes.
- Add a little water to the katakuriko and mix well.
- Add to the soup stock in Step 3, mixing as you add, and be careful to avoid lumps.
- This will give thickness.
- Lastly, add the broccolini and once it's boiled, it's complete.
