Rockin' Jimi Hendrix Thai Chicken Curry!
- 1 (14 ounce) can coconut milk
- 2 -3 tablespoons Thai red curry paste (depending on your preference)
- 1 tablespoon lime juice
- 1 12 cups chicken broth
- 3 tablespoons brown sugar
- 4 tablespoons fish sauce
- 2 chicken breasts
- 12 cup sliced mushrooms
- 1 yellow pepper
- 2 teaspoons garlic (minced)
- 2 cups broccoli florets
- 12 medium onion
- 2 teaspoons dried basil
- 1 green chili pepper (if you prefer more spice)
- Prep the veggies & chicken (cut into strips) and set aside.
- Over medium heat, combine coconut milk with curry paste & blend well.
- Add fish sauce, chicken broth, brown sugar, lime juice and garlic.
- Bring to a boil, reduce heat & simmer for 2-3 minutes.
- Add in ALL remaining ingredients (Except the Broccoli & Yellow Peppers)
- Continue to simmer uncovered for 10 minutes, stirring occasionally
- Add Broccoli & Yellow Peppers, simmer an additional 3-5 minutes
- Serve over y9our favorite white rice
