Fava bean and Cheese salad

  1. Prepare 2 lbs beans for salad by shelling the beans.
  2. Boil in lightly salted water for 1 to 2 minutes.
  3. Drain.
  4. Put beans in ice water.
  5. Remove the husks.
  6. Combine with thinly sliced cheese.
  7. Add lemon juice, olive oil and season to taste.
