Seafood Coquille Recipe

  1. Cook scallops in a little water till tender.
  2. Drain.
  3. In a skillet, saute/fry the scallions in the butter, adding the flour and blending well.
  4. Add in the shrimp, scallops, and yogurt; blend well over very low heat.
  5. Stir in the rosemary, lemon juice, salt, and pepper.
  6. Last, add in the mushrooms.
  7. Turn into individual ramekins or possibly a shallow baking dish.
  8. Sprinkle with bread crumbs, then Parmesan cheese.
  9. Place under the broiler till the cheese browns.
  10. Serves 8 as an appetizer or possibly 4 to 6 as main dish.
