Curried Turkey-and-Mango Wraps
- 1/4 c. light mayonnaise
- 1/4 c. fat-free Greek yogurt
- 3 tbsp. mango chutney
- 3 tbsp. finely chopped red onion
- 1/2 tsp. curry powder
- 2 c. cooked turkey
- 1 small ripe mango
- 1 stalk celery
- 1/4 c. roasted, salted cashews
- 1/4 tsp. kosher salt
- 1/4 tsp. Pepper
- 6 burrito-size flour tortillas or sandwich wraps
- 12 medium green leaf or Boston lettuce leaves
- Mix mayonnaise, yogurt, chutney, onion, and curry in a large bowl until combined.
- Add turkey, mango, celery, cashews, salt, and pepper and stir until turkey is coated.
- Top each tortilla with 2 lettuce leaves and 2/3 cup of the turkey salad.
- Fold up like a burrito.
- Cut in half.
