Italian Potato Salad

  1. In a large pot, bring water to a boil and cook potatoes till tender.
  2. Drain and place potatoes in a large bowl.
  3. Mix in the celery and parsley.
  4. Drizzle with oil and vinegar to taste.
  5. Season with salt and pepper to taste.
