Cinnamon-Sprinkled Coffee Cake

  1. Heat oven to 375F.
  2. Combine 1/3 cup each baking mix and sugar, and cinnamon in medium bowl.
  3. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
  4. Add warm water to coffee in separate medium bowl; stir until dissolved.
  5. Add egg and milk; whisk until blended.
  6. Add remaining baking mix and sugar; mix well.
  7. Pour into 9-inch round pan sprayed with cooking spray; sprinkle with cinnamon mixture.
  8. Bake 18 to 22 min.
  9. or until toothpick inserted in center comes out clean.
