Cinnamon-Sprinkled Coffee Cake
- 2-1/3 cups all-purpose baking mix, divided
- 2/3 cup packed brown sugar, divided
- 1/2 tsp. ground cinnamon
- 2 Tbsp. cold butter or margarine
- 1/2 cup warm water
- 1 Tbsp. MAXWELL HOUSE Instant Coffee (any variety), cooled
- 1 egg
- 1/4 cup milk
- Heat oven to 375F.
- Combine 1/3 cup each baking mix and sugar, and cinnamon in medium bowl.
- Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
- Add warm water to coffee in separate medium bowl; stir until dissolved.
- Add egg and milk; whisk until blended.
- Add remaining baking mix and sugar; mix well.
- Pour into 9-inch round pan sprayed with cooking spray; sprinkle with cinnamon mixture.
- Bake 18 to 22 min.
- or until toothpick inserted in center comes out clean.
