Steamed Cod with Ginger and Scallions

  1. In a large skillet with a tight-fitting lid, combine vinegar, soy sauce, and ginger.
  2. Season both sides of cod fillets with salt and pepper; place in skillet.
  3. Bring liquid to a boil; reduce heat to a gentle simmer.
  4. Cover; cook until fish is almost opaque throughout, 6 to 8 minutes.
  5. Meanwhile, cut green parts of scallions into 3-inch lengths; thinly slice lengthwise (reserve white parts for another use).
  6. Scatter over fish; cover and cook until fish is opaque throughout and scallions are just wilted, about 2 minutes more.
  7. Serve immediately.
