Lower Fat Chocolate Fudge Cake

  1. Heat oven to 350F.
  2. Grease and flour a 9x13 inch cake pan.
  3. Mix cocoa and instant coffee in a small bowl.
  4. Add boiling water gradually, stir continuously until blended.
  5. Set aside to cool.
  6. Sieve flour with baking powder.
  7. Cream eggs and sugar in a large bowl.
  8. Add apple sauce and vanilla and mix well.
  9. Add dry ingredients.
  10. Add cooled cocoa mixture and stir well.
  11. Pour into prepared pan and bake for 30-40 minutes.
