Super-Easy Slow-Cooker Pulled Pork Sandwiches
- 2 pounds Pork Butt Or Shoulder
- 1/2 whole Red Onion, Diced
- 3/4 cups White Vinegar
- 1 bottle (18 Oz. Bottle) BBQ Sauce, divided
- 1 bag (14 Oz. Bag) Cole Slaw Mix, Pre-shredded
- 13 cups Mayonnaise
- 2 Tablespoons Apple Cider Vinegar
- 1 Tablespoon Sugar
- 1 teaspoon Black Pepper
- 8 loaves Hoagie Rolls
- Salt and pepper the pork and brown on all sides in a large skillet.
- Place the browned meat into your slow cooker crock pot along with the diced red onion, white vinegar and half the bottle of BBQ sauce and cook on low for 6-8 hours.
- Meat is cooked when it falls apart easily.
- Remove fat from the meat and discard.
- Shread cooked meat with a fork and place into a casserole dish.
- Add additional BBQ sauce and mix well.
- Just before serving, make the coleslaw (dont make it too early or it may get too moist).
- Combine cabbage mix, mayonnaise, apple cider vinegar, sugar and black pepper in a bowl and toss well.
- Spread meat onto open-faced hoagie rolls.
- Top with a few spoonfuls of coleslaw.
