Texas Cowboy Hash

  1. Cook sausage in 12-inch skillet over medium-heat 6-8 minutes or until no longer pink.
  2. Add potatoes; continue cooking, stirring occasionally, 6-8 minutes or until potatoes are tender.
  3. Stir in beaten eggs and chiles.
  4. Reduce heat to medium.
  5. Cook, stirring gently, 1-2 minutes or until eggs are set.
  6. Remove from heat; top with cheese slices.
  7. Cover; let stand until cheese is melted.
  8. Serve with sour cream and salsa, if desired.
  9. *Substitute pork sausage.
