Herbed Toasted Pita Salad

  1. Preheat oven to 375F.
  2. Split each pita into to rounds and toast on a baking sheet until golden brown, about ten minutes.
  3. Allow to cool and break into bite sized pieces.
  4. In a small bowl, whisk together lemon juice, salt, and pepper.
  5. Add olive oil to create salad dressing.
  6. Toss the lettuce, scallions, mint, cucumber, parsley, and tomatoes in a large bowl.
  7. Right before serving add the pitas, and toss with the dressing to coat.
