Carolina Caviar
- 2 cans (16 Oz. Size) Black-eyed Peas, Rinsed And Drained
- 1 can (10 Oz. Size) White Shoe Peg Corn, Drained
- 1 Large Firm Tomato, Chopped
- 1 Green Bell Pepper, Chopped
- 1 Small White Onion, Chopped
- 4 Scallions, Chopped
- 1 cup Chopped Fresh Parsley
- 2 cloves Garlic, Minced
- 1 Tablespoon Chopped Fresh Cilantro
- 16 ounces, fluid Italian Dressing
- Combine everything but the dressing in a large bowl.
- Add dressing and toss until thoroughly combined.
- Cover.
- Allow to sit and marinate in the refrigerator for at least 4 hours.
