Simple Grilled Radicchio Salad
- 1 cup extra-virgin olive oil
- 1/2 cup plus 2 tablespoons fresh lemon juice
- 2 tablespoons fresh basil, chopped
- 1 clove garlic, minced
- 1 tablespoon honey
- 8 ounces yellow wax beans, blanched
- 4 heads radicchio, quartered
- 4 cups mixed baby greens
- 1/2 cup Parmesan Reggiano, shaved with a peeler
- in a medium bowl, whisk all ingredients to blend.
- Season with salt and pepper to taste.
- You can make this ahead of time and simply whisk again right before serving.
