Super Slow Roasted Venison Roast

  1. Wash outside of roast and pat dry.
  2. Salt and pepper to taste.
  3. Insert digital thermometer into main part of roast.
  4. Place in a 165 degree (F) oven in a heavy pot on a meat rack.
  5. Cook for as long as necessary to reach about 155 degrees F. Turn oven temp to 500 F and roast until internal meat temperature reaches 160F then turn over and finish the meat to 165 F. Remove from the oven and let rest 10 to 15 minutes before cutting.
  6. This method is very slow and uses very low energy and the roast will be very good.
