Red & Green Cheesecake Recipe

  1. Mix 2 pkg.
  2. (8 oz.
  3. each) PHILADELPHIA Cream Cheese, softened, 1/2 cup sugar and 1/2 tsp.
  4. vanilla with electric mixer on medium speed until well blended.
  5. Blend in 2 eggs.
  6. Pour into ready-to-use graham cracker pie crust (6 oz.
  7. or 9-inch).
  8. Bake at 350F for 35 to 40 minutes or until center is almost set.
  9. Cool.
  10. Refrigerate 3 hours or overnight.
  11. Just before serving, arrange 2 rows of halved strawberries around edge; brush lightly with melted strawberry jelly.
  12. Tuck small mint sprigs into the fruit so that each slice will have some red and green color when cut.
  13. Makes 8 servings.
