Curry Up

  1. Fill a cocktail shaker with some ice.
  2. Add gin, simple syrup and fresh lemon juice.
  3. Shake.
  4. Strain into an ice-filled Collins glass and top with a splash of club soda.
  5. Garnish with a lemon peel.
  6. In a sauce pan over high heat, combine all the ingredients.
  7. Bring to a boil, and when sugar is fully dissolved remove from the heat.
  8. Let cool for 20 minutes, then strain.
