Baked Tilapia Sandwich
- 1 cup Flour
- 2 whole Eggs
- 1 cup Panko Breadcrumbs
- 1 cup Grated Parmesan Cheese
- 4 pieces Tilapia Fillets, Cleaned And Patted Dry
- Salt And Pepper
- 1 cup Mixed Greens Or Lettuce, Washed
- 4 whole Demi Baguettes Or Hamburger Buns, Toasted
- 3/4 cups Light Mayonnaise
- 2 cloves Garlic, Minced
- 1 Tablespoon (juice Of) Lemon
- Preheat oven to 400 F. Spray a rimmed baking sheet with cooking spray and set aside.
- Place flour in a shallow bowl, and whisk the eggs in a separate bowl.
- In another separate bowl, combine breadcrumbs with shredded Parmesan cheese.
- Add a pinch of salt and pepper.
- Drench one tilapia fillet in flour, then in the egg, and finally in the breadcrumb mix.
- Make sure to evenly coat each fillet.
- Place on the sprayed baking sheet.
- Repeat process until you go through all your fillets.
- Bake the fish fillets for 15 to 18 minutes, or until fish is cooked through.
- The time depends on thickness of the fillets.
- Fish will flake easily with a fork when done.
- Remove pan from oven when done, set it on a rack and allow fish to slightly cool.
- To make the garlic mayonnaise, combine mayonnaise, garlic and lemon juice in a medium sized bowl.
- Stir completely.
- Cut the toasted baguettes in half (sandwich style) and spread some garlic mayonnaise on each side.
- Arrange mixed greens or lettuce on the bottom bun, then place one tilapia fillet on top.
- Add optional toppings like onions or tomatoes and then add the top bun.
- Serve with fries or salad.
