Breakfast Oatmeal Muffins Recipe
- 2 Large eggs
- 1/2 c. sugar
- 2 c. buttermilk
- 2/3 c. dark molasses
- 3 c. flour
- 2 teaspoon baking soda
- 1 teaspoon baking pwdr
- 1 teaspoon salt
- 1 1/2 c. oats
- 2/3 c. chocolate chips
- 3 c. trail mix
- (I use homemade trail mix - combining almonds, sunflower nuts, raisins, dates and pumpkin seeds, that I also add in to homemade oatmeal for breakfast.)
- Beat Large eggs till light; gradually add in sugar.
- Blend in buttermilk and molasses.
- Sift dry ingredients; add in to buttermilk mix.
- Beat only till blended.
- Stir in oats, trail mix and chocolate chips, just sufficient to combine proportionately.
- Fill muffin c. (use paper liners) and bake about 20 min at 350 degrees.
- Makes about 30.
- Great for mid morning snack.
