Grilled Cilantro Chicken with Spicy Thai noodles
- 1 carrot, matchstick
- 1 Red bell pepper, sliced
- 3 Green onions, chopped
- 2 garlic cloves minced
- 2 tbsp olive oil, extra virgin
- 4 boneless skinless chicken breast
- 3/4 lb any long skinny noodle (spaghetti, or any other type)
- 3 tbsp olive oil, extra virgin
- 1 Salt and Pepper (to taste)
- 4 Garlic cloves minced
- 1/4 cup Cilantro chopped
- 1 Zest from 1 lime
- 1 Juice from 1 lime
- 2 tbsp Rice Vinegar
- 1 tbsp Fresh ginger,grated
- 1 zest from 2 limes
- 1 juice from 2 limes
- 1/4 tsp Red pepper flakes
- 1 salt and pepper to taste
- 1 tbsp Red or green Thai curry paste
- 1 1/2 tbsp rice Vinegar
- 1 cup chicken stock
- In a large bowl bring together chicken marinade and marinade chicken for 1 hour or overnight (longer the better)
- When ready, grill chicken until cooked through and set aside to rest.
- In a bowl, mix together the noodle sauce until the curry paste is mostly dissolved
- In a pot, cook spaghetti noodles al dente, strain and leave in colander (so you can do everything else in the same pot )
- In the same pot, heat 2 tbs in oil and add minced garlic.
- Cook 1 min,then add your pepper and carrots
- Add the noodle sauce to the pot, and let simmer 2 min, then add cooked spaghetti back into the pot
- Toss the spaghetti, veggies and the sauce together and add chopped green onions.
- Slice up your chicken and serve on top of spaghetti
