Beef 'N Broccoli Stir Fry Recipe
- 1/2 pound top round beef, trimmed of all visible fat
- 1/4 c. water
- 1 tbsp. soy sauce
- 1/2 teaspoon cornstarch
- 1 tbsp. vegetable oil
- 2 c. fresh broccoli florets
- 1 c. thin strips of carrots
- 1 sm. onion cut in 6 to 8 wedges
- Few grains pepper
- Slice beef in strips (across grain i.e.
- across the narrow width).
- Mix 2 Tbsp.
- water with soy sauce and cornstarch in small bowl.
- In 10 inch skillet, heat 1 1/2 tsp.
- oil.
- Add in vegetables and stir fry 2 min till broccoli is bright green.
- Reduce heat to low, add in remaining 2 Tbsp.
- water, cover and simmer 1 minute.
- Return beef to skillet.
- Stir in soy sauce mix and add in to skillet.
- Cook stirring constantly, till thickened, about 1 minute.
- Sprinkle with pepper and serve.
- Makes 2 servings.
- 359 calories per serving.
