Blueberry and Cheese Muffins
- 2 Eggs
- 60 ml Olive oil
- 60 g Sugar
- 170 g Flour
- 30 g Cornstarch (not necessary)
- 1 tsp baking powder
- 1 cup Blueberry
- 1/2 cup grated cheese
- 3 tbsp Maple syrup
- 50 ml Milk
- Preheat the oven to 180C/350F.
- Beat the eggs in a bowl, add the olive oil and sugar and mix well.
- Add the blueberry and grated cheese into the bowl to mix.
- Sift the flour, cornstarch and baking powder, add to the bowl, then pour the milk slowly in and stir gently until there is no powdery texture left.
- Line a muffin pan with paper liners or use silicon muffin cups.
- Fill each muffin cup 3/4 of the way, and bake for about 20 minutes or until the top is golden brown.
- note: My little boy helped to make the muffins with me, and he added chopped marshmallow before baking.
- It was also sweet and yummy :)
