Apple Cranberry Bread
- 2 eggs
- 3/4 c. sugar
- 2 Tbsp. vegetable oil
- 1 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 c. chopped peeled tart apples
- 1 c. fresh or frozen cranberries
- 1/2 c. chopped nuts
- In a mixing bowl, beat the eggs, sugar and oil.
- Combine the flour, baking powder, cinnamon, baking soda and salt.
- Add to egg mixture just until combined (batter will be very thick).
- Stir in apples, cranberries and nuts.
- Transfer to baking pans, 8 x 4 x 2 or little pans, whatever you prefer.
- Bake at 350u0b0 for 60 to 65 minutes or until a toothpick inserted near the center comes out clean.
- Cool 10 minutes before removing from pan to wire rack. Cool completely.
