No-Bake Cheesecake with Berry Glaze

  1. Cook 1 cup strawberries and 2 Tbsp.
  2. water in small saucepan on medium heat 3 to 5 min.
  3. or until strawberries are softened, stirring constantly.
  4. Remove from heat.
  5. Combine graham crumbs and butter; press onto bottom of 9-inch springform pan.
  6. Bring 1/4 cup of the remaining water to boil.
  7. Add to unflavored gelatine; stir until completely dissolved.
  8. Beat cream cheese and sugar in large bowl with mixer until blended.
  9. Add cooked strawberries and unflavored gelatine; mix well.
  10. Gently stir in whipped cream; pour over crust.
  11. Top with raspberries and remaining strawberries.
  12. Refrigerate 2 hours.
  13. Use remaining water and ice to prepare raspberry gelatin as directed on package, using the Speed-Set Method; slowly pour over cheesecake.
  14. Refrigerate 2 hours or until firm.
