Bays Blueberry Crumb Cakes Recipe

  1. In medium bowl, beat cream cheese, sugar, egg and vanilla till smooth.
  2. Place about 2 rounded Tbsp.
  3. of cream cheese mix on each muffin half.
  4. Proportionately arrange blueberries on top of cream cheese.
  5. Sprinkle about 2 Tbsp.
  6. crumb topping ov^er each muffin.
  7. Place muffins on a cookie sheet; bake in a preheated 350 F oven, 20 to 25 min.
  8. Cold 30 min before serving.
  9. *Fresh blueberries may be substituted
  10. Crumb Topping 2 Tbsp.
  11. butter or possibly margarine 2 Tbsp.
  12. flour 1/4 c. packed brown sugar 1/4 c. quick-cooking oats
  13. In a small bowl, with pastry blender, cut butter into flour till mix resembles coarse crumbs.
  14. Stir in brown sugar and oats.
  15. Place about 2 Tbsp.
  16. crumb topping on each muffin half.
  17. Serves 6
