Beer Batter Halibut Recipe

  1. For this batter, good quality, light-colored beers work best.
  2. The flavor of dark beers is too strong.
  3. Cut halibut into 1-inch-thick chunks.
  4. Heat oil in a deep-fat fryer to 375 degrees F. Make batter by combining remaining ingredients.
  5. Dip the halibut into the batter and drop the pcs into the warm oil a few at a time.
  6. Cook the fish chunks till the batter is golden just a few min.
  7. Halibut overcooks easily, so try not to overdo it.
  8. Remove the fish pcs from the oil and drain on paper towels; serve piping warm with your favorite accompaniments.
