Ice Cream With Wine Soaked Peaches By Blondie
- 1/2 cup sugar
- 1 cinnamon stick
- 2 or 3 whole peppercorns
- 1 or 2 strips of lemon zest
- 2 large ripe peaches, pitted and halved
- 1 1/2 cup red wine
- 1 pints vanilla bean ice cream
- Combine the wine, sugar, cinnamon, peppercorns, and lemon zest in a saucepan and reduce over medium high heat.
- Heat about 12 to 15 minutes until ingredients turn into a syrup.
- Remove the cinnamon, lemon zest, and peppercorns with a slotted spoon and discard.
- Add the peach halves and turn to coat in the wine sauce.
- Spoon the wine covered peaches into dishes and top them with ice cream
