Creamed Cauliflower And Peas Recipe
- 1 lg. cauliflower (3 pkg. frzn)
- Salt
- 1 (10 ounce.) pkg. frzn peas
- Lowfat milk
- 1/4 c. butter
- 3/4 c. finely minced onion
- 3 tbsp. flour
- 1/4 teaspoon pepper
- 1/4 teaspoon nutmeg
- Cook cauliflower till tender and drain.
- Cook peas drain liquid and reserve adding lowfat milk to make 2 c.. Set aside.
- Saute/fry onion in butter.
- Remove and stir in flour, 1/2 tsp.
- salt, pepper and nutmeg.
- Stir in liquid and bring to boiling.
- In casserole combine peas, cauliflower and sauce.
- Top with 1/4 c. bread crumbs, which have been browned in 1 Tbsp.
- melted butter.
- Bake at 400 degrees covered 30 min uncovered 20 to 30 min.
- Serves 6 to 8.
