Biltmore Bacon Dressing Recipe
- 1 lb Bacon, julienned
- 1 med Onion, diced
- 2 1/2 c. Celery, diced
- 3/4 c. CIDER vinegar
- 1/4 c. DIJon mustard
- 1 tsp Herbed seasonings
- 1/2 tsp White pepper
- 2 c. Sugar
- 1/4 x Kitchen bouquet
- 2 Tbsp. Cornstarch
- 2 Tbsp. Cool water
- Saute/fry bacon and drain off 2/3 of pan drippings leaving 1/3 third in pan.
- Add in celery and onion and saute/fry.
- Add in vinegar and turn up the heat to reduce by half.
- Then add in the dijon mustard and seasonings, sugar, and kitchen bouquet.
- Cook a bit then add in the cornstarch mix (cornstarch + cool water) Cook till thickened.
- Cold.
- Keep in glass jars.
- Reheat in microwave and serve over greens
