Beef Miroton Recipe

  1. In a large heavy skillet cook onions in 2 Tbsp.
  2. oil over moderate heat, stirring, till golden brown and add in flour.
  3. Cook mix over moderately-low heat, stirring, 2 min and stir in broth and gravy.
  4. Simmer sauce, stirring, 3 min and stir in mustard.
  5. Preheat oven to 400 degrees.
  6. Spoon half of sauce into 2-qt shallow flameproof baking dish and arrange beef on it, overlapping slices.
  7. Spread remaining sauce over beef.
  8. In a small bowl toss bread crumbs with remaining 1 1/2 Tbsp.
  9. oil and sprinkle over sauce.
  10. Bake miroton in upper third of oven till just bubbling around edges, about 5 - 10 min.
  11. If crumbs are not golden brown, put miroton under broiler 1 to 2 min.
  12. This recipe yields 4 to 6 servings.
