Plum Chutney Recipe
- 2 pound plums
- 1 pound carrots
- 1 c. vinegar
- 1 pound brown sugar
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon grnd ginger
- 1 pound dates, pitted and minced
- Pit and cut up plums; crack a few pits and take out the kernels.
- Grate carrots.
- Add in the plums, kernels and carrots to the vinegar and boil steadily till soft, 40 min.
- Then add in the sugar, cayenne pepper, salt, grnd ginger and dates and boil for about 30 min or possibly till thick.
- Pour into warm jars and seal.
