Chinese Plum Chicken Cutlets

  1. Saute chicken in butter until deep golden brown.
  2. Sprinkle with salt and ginger while browning.
  3. Add plum liquid, lemon slices, and wine to the chicken .
  4. Cover and simmer 25-40 minutes until tender.
  5. Halve and pit plums.
  6. Remove chicken to warm platter.
  7. Stir cornstarch into the water and blend into juices in pan.
  8. Bring to a boil; stirring constantly until thickened.
  9. Add plum halves and cook 2 minutes until warmed through.
  10. Pour over the chicken and serve.
