Fiesta Beef Hash

  1. Cook ground beef and onion in 10-inch skillet over medium-high heat, stirring occasionally, 8-10 minutes or until browned.
  2. Drain off fat.
  3. Stir in potatoes, salt and pepper.
  4. Cover; continue cooking, stirring occasionally, 8-10 minutes or until potatoes are tender.
  5. Stir in salsa.
  6. Continue cooking 1-2 minutes or until heated through.
  7. Remove from heat.
  8. Arrange cheese quarters over top.
  9. Top with olives and green onions.
  10. Cover; let stand 3-4 minutes or until cheese is melted.
