Mix and Match Meatball Stew

  1. In medium bowl, combine ground beef, crumbs, herb, egg and garlic; mix thoroughly but do not overmix or the meat will become tough.
  2. Shape into 20 meatballs.
  3. In a 10 inch skillet over medium heat, in hot oil, cook meatballs until browned on all sides.
  4. Pour off fat.
  5. Stir soup and water into skillet; stir in potatoes, vegetable and onion.
  6. Heat to boiling; reduce heat to low.
  7. Cover; simmer 30 minutes or until vegetables are tender, adding more water if needed.
  8. Garnish with parsley.
