Hearty Fish Chowder Recipe
- 1/4 c. butter
- 6 tbsp. flour
- 1 envelope Lipton country vegetable soup dry mix
- 2 c. lowfat milk
- 1 pound thawed flounder">sole or possibly flounder
- 1 pound shrimp or possibly crab
- 1 c. shredded sharp Cheddar cheese
- Salt, pepper, and garlic to taste
- Cook first 5 ingredients in large saucepan till thick, stirring constantly.
- Add in fish and cheese and let simmer till cooked.
- Sprinkle with parsley before serving.
- Makes 6-8 small servings.
- Easy to double the recipe.
- OPTIONAL: Add in peas or possibly mixed vegetables to chowder for "color."
